Texas Caviar
I got this recipe from a mom at the school I used to teach. It's a good dip to serve with fritos or tostito chips.
Chill 2 hours covered.
15 oz. can black beans
15 oz can pinto beans
15 oz can black-eyed peas
1 can white shoepeg corn
1-2 jalapeno peppers, diced
1 red pepper, diced
1 green pepper, diced
1 med. red onion, diced
fresh cilantro to taste
Marinade opt 1: (Good, but very sweet)
3/4 cup apple cider vinegar
1/4 cup vegetable oil
1 cup sugar*
1 tspn salt
1/4 tsp ground pepper
1 tbsp water
(* this is very sweet, I'd recommend starting with less sugar and adding to your likeness)
Put all ingredients together, mix well until sugar dissolves, and then pour over bean mixture.
Marinade opt 2: (zesty)
Use Zesty Italian dressing instead.
Directions:
- Drain & rinse beans & corn in colander
- Pour beans & diced vegetables in a bowl with a lid.
- Mix & pour marinade over the top.
- Cover and let mixture marinade in fridge for at least 2 hours.
- Serve with fritos or tostitos.
